Savory Waffle & Egg Salad Sandwich
Savory & spicy, this is one out of the box pairing perfect for brunch.
It's waffles, egg salad, and a sandwich all in one - talk about efficiency for flavor! Whip this recipe up in 20 minutes for the ultimate brunch delicacy.
1 cup horseradish cheese
8 tsp chives (chopped)
4 tsp Colman's Prepared Mustard
8 cherry tomatoes (diced)
1 small red onion (diced)
1 celery stick (diced)
4 tsp chives (chopped)
Make enough waffle batter for 4 round waffles, per your package instructions. Mix the batter with your cheese, chives and salt/black pepper per taste.
Make your waffles as you normally would, and set aside to cool.
In a bowl, mix together your eggs, mustard, mayonnaise, cherry tomatoes, red onion, celery and chives. Add salt/black pepper per taste.
Use kitchen scissors or a knife to cut your waffles into 4 triangular pieces each. Evenly divide the waffle pieces and spread on the egg salad to half of them. Close up each waffle & your sandwich is ready to serve!
